I love the fact that you don’t have to bake it, you basically mix a few ingredients together and you have a sweet, delicate dessert. You don’t need a candy thermometer either.

Let’s make some fudge!

You can use your stovetop if you prefer rather than using your microwave.

  • In a medium saucepan, you will heat your chocolate chips and peanut butter over medium heat.
  • You will need to continue stirring while you bring it to boil. Take a few minutes stirring until well combined.
  • Then turn down heat stir in condensed milk until well combined.
  • Then pour and pan and cool.

Can you freeze fudge?

Yes, you can freeze fudge. We like to cut the fudge before freezing in smaller sizes. This way, you can grab a piece anytime without having to cut a piece while frozen. It is best to double wrap it in plastic wrap or parchment paper to prevent the fudge from freezing.

Fudge will last for 2 months in the freezer. If you freeze your fudge, you don’t need need to thaw it before serving. See can you freeze fudge for more tips and tricks.

Try these Peanut Butter Desserts:

We love peanut butter at our house. Having it for dessert is no exception. When it comes to peanut butter combining it with chocolate is one of my favorite ways to eat it.

  • Chocolate Peanut Butter Cups RecipeHave you ever try making homemade peanut butter cups? You will be surprised how easy it is to make.
  • Easy Peanut Butter Cheesecake Bites Recipe – We love cheesecake, but mixing peanut butter with it goes to a whole new level.
  • Chocolate Reese’s Peanut Butter Cupcakes Recipe – One of my kids love Reese’s Peanut Butter cups and requests these every year for his birthday.

What kind of peanut butter do you use?

We like using the creamy peanut butter for this recipe. It works perfectly to achieve that rich creamy texture that we love when making fudge.

If you would prefer to use the crunchy peanut butter you can. The texture would be a bit crunchy but if that is all you have, then I would give it a try.

I would stay away from the natural peanut butter. It doesn’t set well with this recipe.

Add in some mix-ins:

This peanut butter fudge is great as it is, but sometimes we want to mix things up. Why not add in some variations to your fudge. Here are some of our favorites:

  • Roasted Peanuts – Using crunchy peanut butter is good, but you can also mix in some roasted peanuts for a crunchy fudge.
  • Chocolate Chips – Mini chocolate chips are a great addition.
  • Butterscotch Chips – These have become a family favorite add-in.
  • Marshmallows – The kids will love adding these in.
  • Vanilla Extract – You can add in a few drops of vanilla. We love the warmth it gives.

Get creative and add in some additional ingredients. We love trying new items every time we make them.

How to store fudge:

It is easy to store fudge. It is best to keep leftover fudge in an airtight container in the refrigerator. It will last up to 1 week.

FAQs

Why is my 3 ingredient fudge not setting? ›

The main reason is that your Fudge has not reached the optimum temperature. If your mixture only reaches 110 or 112 degrees Celsius it will always be soft. That's why we recommend investing in a sugar thermometer. Another reason your Fudge is not setting is that the ratio of liquid to sugar is too high.

What is the secret to perfect fudge? ›

The key to creamy, luscious fudge is controlling crystal formation. If the sucrose (table sugar) crystals are small, the fudge will feel creamy and smooth on your tongue. But if the crystals are large, the fudge develops a crumbly, dry, or even coarse texture.

Why is my peanut butter fudge not setting up? ›

If your fudge isnt setting up, cut the amount of butter in half. The problem is the fat from the peanut butter added with the butter adds way to much fat.

What is the secret to smooth fudge that is not gritty? ›

Once a seed crystal forms, it grows bigger and bigger as the fudge cools. A lot of big crystals in fudge makes it grainy. By letting the fudge cool without stirring, you avoid creating seed crystals.

How to fix fudge that has not set? ›

OPTION 3) Sieve together some powdered sugar and cocoa powder, and gradually work this into your unset fudge until it reaches the consistency of dough, then roll out and cut into squares, or shape into balls and then roll in powdered sugar (roll the balls in icing sugar, not yourself).

What to do with failed fudge? ›

Good use of failed fudge: fudge that is too hard, too soft, too runny, too sugary, too chewy, etc. Proportions are as follows: for every 2 cups (roughly 1 pound yield) of any failed fudge that is not runny, you'll need 1 egg, ½ cup all-purpose flour, and ½ cup milk. If fudge is soupy, halve the milk (to ¼ cup).

What makes fudge softer? ›

If there is too much evaporation, when the cooking time is too long, there will not be enough water left in the fudge and it will be too hard. Conversely, if the cooking time is too brief and there is not enough evaporation, too much water will remain and the fudge will be too soft.

What makes fudge gooey? ›

Fixing Fudge

You wait patiently, only to discover that it's still a sticky, gummy mess. But don't despair or throw out the entire pan of fudge: You can probably remedy the situation. Fudge usually behaves this way when it's not cooked to a high enough temperature (due to oversight or a faulty candy thermometer).

Why won't my condensed milk fudge set? ›

If your fudge fails to harden in the fridge, it means that you probably didn't cook it to the right temperature. Fudge is a candy, and that means it is extremely picky about temperature - fudge must be cooked to precisely 237–239 degrees Fahrenheit so that sugar forms the desired consistency when cooled.

How do you fix runny peanut butter fudge? ›

If your fudge is soft or runny, it probably didn't come up to a high enough temperature while it was cooking. Put it back into the saucepan and add 1–2 US tbsp (15–30 ml) of 35% fat whipping cream.

How do I know if my fudge is going to set? ›

Points to remember

You know it's ready when a small amount of the mixture dropped into a glass of cold water sets into a soft ball that you can lift out with a teaspoon and pinch between your fingers. Turn off the heat and keep stirring for 5 minutes or until the mix starts to thicken a little.

Should you stir fudge while it's cooking? ›

Don't stir!

Once the fudge reaches soft-ball stage on the candy thermometer, remove from the heat and let the temperature drop to 110°F. Keep that spoon or spatula out of the pot until this happens. If you stir too early in the process, you'll make the sugar crystals too big and end up with grainy fudge.

Why is my peanut butter fudge dry and crumbly? ›

Follow the recipe to a tee when cooking the sugar

However, it's important to bring the sugar to the exact right temperature. If it doesn't boil, your fudge will end up too mushy, and if it cooks for too long, you'll end up with a dry, crumbly mess.

How long do you boil fudge to get to soft ball stage? ›

How long does it take to make fudge:
  1. about 18 min to reach boiling.
  2. about 40 minutes to reach soft ball stage.
  3. 60 minutes to cool.
  4. 28 minutes to beat in a KitchenAid (your time for this may vary)
  5. 4 hours to set.

Why did my fudge not solidify? ›

If the fudge is very soft and slightly chewy then it is possible that it did not quite cook to soft ball stage and next time the mixture should be cooked to a slightly higher temperature (soft ball is 112-116c/235-240F and a sugar or candy thermometer can help).

Why is my fudge mixture not thickening? ›

Conversely, if the cooking time is too brief and there is not enough evaporation, too much water will remain and the fudge will be too soft. A temperature of 112°C to 114°C (234°F to 237°F) must be maintained. This will ensure the fudge has the ideal concentration of water and sugar.

How do you make homemade fudge firmer? ›

Harden the fudge: Place your container or tins in the fridge for 2 hours, which is the time it takes for the fudge to set. Once it's hardened, cut the fudge into 12 pieces or remove it from the muffin tins. Store in the fridge or the freezer (if you don't devour it right away).

Why is my fudge not working? ›

Fudge usually behaves this way when it's not cooked to a high enough temperature (due to oversight or a faulty candy thermometer). If your fudge is tough, hard, or grainy, then you may have made one of several mistakes: You may have overcooked it, beaten it too long, or neglected to cool it to the proper temperature.
