Sometimes one recipe inspires another and these Coconut Bounty Cookie Bars are a perfect example.

Just a couple of weeks ago, I posted a recipe for Coconut Dream Bars. That recipe was a very fond remembrance of cookie treats from my childhood.

So delicious for an afternoon coffee break.

Not surprisingly, a lot of people recognized the old recipe and set out to make them for themselves. I received quite a few messages from folks telling me how much they enjoyed them.

Fine cut dried (desiccated) unsweetened coconut is the type to use in this recipe.

The recipe quickly became one of our most popular new cookie recipes of the year.

As I often do, I always think of new twists on old recipes. I find many times they can be even better than the original.

Some people will undoubtedly feel that was about these Coconut Bounty Cookie Bars. They are sort of a double chocolate version of those very popular Coconut Dream Bars.

Bake until the coconut layer is only lightly browned around the edges.

Use any kind of chocolate chips you like. I prefer 50% cocoa dark chocolate.

Especially at this time of year, we have quite a surplus of baking ingredients in the cupboard. I blame the Costco effect for most of that.

Yes, there are savings to be had, but instead of buying one can of sweetened condensed milk for example, I end up with two extras.

Easy and freezer friendly too.

A big bag of coconut and another of chocolate cookie crumbs were also more than half full after being opened to use in other recipes. All of this had to go.

I am determined to not bake anything in January! (Hmmm, let’s see how that goes.)

So with the success of the first recipe, the elements were all there for these Coconut Bounty Cookie Bars, and I got to clean out the baking cupboard too.

At this time of year, I never worry about too many treats in the freezer. Before the Holidays, we prepare cookie trays for family and friends, so the surplus is always shared and never wasted.

I’m sure, you too can find a few willing recipients to share in your cookie bounty.

Cook Time: 10 minutes

Total Time: 30 minutes

Coconut Bounty Cookie Bars. A super easy cookie bar with a chocolate cookie crumb base and a sweet coconut centre, all topped with a luscious chocolate layer. Very freezer friendly too.

Ingredients

  • 2 cups chocolate cookie crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 1 can sweetened condensed milk (300ml in Canada, 14 oz in the US)
  • 2 cups unsweetened dried coconut (desiccated coconut)
  • 2 tsp vanilla extract
  • 1 1/4 cups chocolate chips
  • 3 tbsp butter or whipping cream

Instructions

  1. Preheat oven to 350 degrees F.
  2. Grease a 9x9 inch baking pan and line it with parchment paper.
  3. Melt the 1/2 cup of butter and mix together with the chocolate cookie crumbs and sugar.
  4. Press the crumb mixture firmly into the bottom of the pan.
  5. Bake for 10 minutes.
  6. While the bottom layer is baking, stir together the sweetened milk, coconut & vanilla extract.
  7. Spread the coconut mixture evenly over the previously baked chocolate cookie crust layer.

Coconut Bounty Cookie Bars, second bake.

  1. Bake for another 10-15 minutes, or until the edges just start to turn brown. Be careful not to over bake or the cookie bars will be too dry.
  2. Remove from oven and allow to cool completely in the pan.
  3. When cool, melt together the chocolate chips and butter (or whipping cream).
  4. Spread evenly over the cooled coconut layer and let stand for an hour or so for the chocolate to set.
  5. Cut in squares and enjoy.
  6. These cookie bars are very freezer friendly for Holiday baking or just to keep on hand for a dessert or sweet treat at any time.
