I made tasty soup with as many pantry staples as possible.This filling soup is really high in healthy fats and protein, with plenty of veggies to add important nutrients and fiber.
This is a soup that will give your body the vitamins that it needs to fight disease and stay in fat burning mode. I love to make this during cold season because it’s so good for you and warms you up from the inside out.
Cajun Chicken Soup
How spicy do you like your soup? You can control exactly how spicy or mild you make this soup.
If you want it to be milder, add less Cajun seasoning. If you want it spicier, add more Cajun seasoning, some chopped jalapenos, and even some hot sauce.
Do you have to add the shrimp? No, you don’t. You can make it without the shrimp and just make Cajun chicken soup. I used chicken breasts, but you can use chicken thigh pieces as a replacement.

You can even cook this with leftoverketo chicken meatballs instead of chicken breasts.

Save yourself time and make sure you buy peeled and deveined shrimp. Otherwise, you’ll need to peel and devein them before adding them to the soup.
The best thing about shrimp is that it cooks so quickly. It only takes a few minutes for shrimp to cook completely in the skillet.
You’ll know the shrimp is fully cooked when it goes from a whitish color to completely pink and opaque.

Ingredients
- Olive Oil
- Chicken Breasts
- Shrimp
- Cajun Seasoning
- Butter
- Onion
- Red Bell Pepper
- Celery
- Minced Garlic
- Cream Cheese
- Chicken Broth
- Monterey Jack Cheese
- Bacon
- Green Onions
Directions
Heat the olive oil in a skillet over medium high heat. Add in the chicken, and season it with 1 tsp of the cajun seasoning. Saute until
browned and cooked through. Remove and set aside.
Place the shrimp into the same skillet, and season with 1 tsp of the cajun seasoning. Saute until cooked through. Remove and set aside.
Melt the butter in a pot over medium heat. Add in the celery, onion and red bell pepper. Saute until the vegetables have softened.
Stir in the garlic and remaining cajun seasoning. Mix in the cream cheese until melted.
Pour in the chicken broth, and stir to combine well.
Return the meat to the pot, and simmer for another 5 minutes.
Garnish with cheese, green onions and bacon before serving.
