When I started following a keto style way of eating, I didn't have any problem dropping gluten (already doing that!) BUT I did miss having some kind of bready somethingto accompany my soup.

I tried a lot of different recipes for keto bread and keto rolls.

A lot of recipes involved cauliflower. Or zucchini. Or cream cheese.

And while some of these recipes were pretty good, there is nothing easyabout dicing up a cauliflower or shredding and then wringing out zucchini.

Using cream cheese isn't hardbut you need to remember to set it out to soften ahead of time, and if anything, I am both busy and forgetful.

I needed a low-carb, gluten-free bread recipe that I could just walk into the kitchen and make in a few minutes without having to remember to do anything ahead of time.

When Wild Harvest asked me to develop a keto friendly recipe using their ingredients, I thought it would be the perfect opportunity to perfect my keto roll recipe that I had been slapping together for the last few months.

These tasty little keto garlic bread bites are low-carb (only 1.65 net carbs per roll!), gluten-free and full of yummy, garlicky goodness.

I recently served them at a holiday dinner for my not-gluten-free, not-keto family members and everyone loved them.

These keto garlic bread rolls are the perfect accompaniment to any dinner where you want to have gluten-free or keto friendly options available that anyone can enjoy.

  • 1 stick (8 Tbsp) Wild Harvest Organic Salted Butter, divided
  • 1 large Wild Harvest Organic Grade A Large Brown Egg
  • 1 Tbsp diced or crushed garlic
  • 1/4 cup Wild Harvest Organic Coconut Flour
  • 1/4 cup organic almond flour
  • 2 tsp organic baking powder
  • 1/4 tsp sea salt
  • 1 1/2 cup (6 ounces) Wild Harvest Organic Shredded Mozzarella Cheese
  • 1/4 cup organic shredded parmesan cheese

Directions

Keto Garlic Bread Rolls Step 1:

Preheat oven to 350 Fahrenheit (177 centigrade).

Prepare a baking sheet with a piece of parchment paper.

Melt 6 Tbsp of the butter in a small dish.

Whisk in 1 Wild Harvest Organic Grade A Large Brown Egg and 1 Tbsp diced garlic.

Set aside.

Keto Garlic Bread Rolls Step 3:

In a medium bowl, combine 1/4 cup Wild Harvest Organic Coconut Flour, 1/4 cup almond flour, 2 tsp baking powderand1/4 tsp sea salt.

Mix together until combined and set aside.

Keto Garlic Bread Rolls Step 4:

Add one 6-ounce bag ofWild Harvest Organic Shredded Mozzarella Cheese to a small or medium pot.

Melt cheese over medium heat, stirring every 30 seconds or so until cheese is melted.

Mix in melted butter mixture. Stir until well combined.

Mix in dry ingredients. The dough will begin to come together. Stir until all dry ingredients have been incorporated.

Keto Garlic Bread Rolls Step 5:

Turn out dough onto a smooth surface such as a marble countertop or silicone mat.

Lightly knead dough together.

Pat into a long, flat loaf shape.

Cut with a sharp knife into 16 pieces.

Break one piece of dough away from the loaf.

Roll into a snake shape and twist it back onto itself to form a knot or coil shape.

You will want to work quickly as the dough becomes brittle if it sets too long and will no longer be flexible enough to shape.

If this happens, you can roll pieces or dough together into balls instead.

Place twisted dough rolls onto the prepared baking sheet.

Melt the remaining 2 Tbsp of butter in a small dish.

Brush melted butter over rolls and add a small sprinkle of shredded parmesan.

Keto Garlic Bread Rolls Step 8:

Bake rolls in350-degreeoven for 20-23 minutes or until golden brown.

Rolls are best served warm.

    Can I make these low carb rolls ahead of time?

    I find that these rolls are best when they are fresh.

    To save time on baking day, though, I like to prepare the dry mix ahead of time, so all the measuring is done.

    To do this, combine 1/4 cup coconut flour, 1/4 cup almond flour, 2 tsp baking powder and 1/4 tsp sea salt in a plastic bag or a small glass jar.

    Shake everything together and now on baking day, all you have to do it mix the melted butter with an egg and garlic, melt the cheese and mix everything together! And then bake it of course.

    Which flour is best for a keto diet?

    Coconut flour and almond flour are both great choices for keto. I highly recommend choosing organic products like Wild Harvest organic coconut flour.

    It's important to note that neither coconut flour nor almond flour have the same texture as a wheat-based flour that you are used to so do not expect to just replace regular (read: wheat) flour across the board and expect it to turn out the same.

    I find I get the best results in keto baking when I combine both coconut flour and almond flour instead of just using one type alone.

    What bread can you eat on the keto diet?

    While there are some low carb bread type products available to purchase in stores, the way to get the best flavor and texture is the make your keto bread yourself.

    My keto bread recipeis gluten-free, easy to make and (most importantly!) delicious.

    Can I eat garlic on keto? Is garlic low carb?

    Garlic is gluten free and low carb. Garlic makes a flavorful addition to any keto recipe. Oneclove of garlic has about 1 gram of carbohydrates. To get 1 Tbsp of diced garlic, you need about 2 cloves of garlic.

    The garlic in this recipe adds about 2 grams of carbs to the whole batch - or about .25 grams of carbs per serving.

    And while you couldtake the garlic out, it adds so much awesome flavorthat I wouldn't recommend it!
